Sweet Corn and Egg Soup


It's quick, easy and delicious.


1 can Sweet Corn Cream Style (I usually buy "Del Monte Sweet Corn Cream Style" )
3 cups of water
3 Eggs (beaten)
Salt to taste
1/2 tsp sugar
1/2 tsp Ajinomoto
White pepper
3 tbsps Corn flour
1/2 cup water


Method

1. Mix the corn flour in 1/2 cup water and keep aside.
2. In a deep saucepan, add 3 cups water and corn, stirring and cover. Bring to boil.Simmer for 15 minutes or until the corn is cooked.
3. Add eggs,stir slowly then add sugar,ajinomoto,pepper and salt to taste.
4. Add the cornstarch mixture to thicken the soup and cover.
5. Let simmer for 10 minutes before serving.

Homemade Ice-cream


Do you like ice-cream?Would you want to make your own homemade ice cream, here's a recipe.
My mother taught me how to make ice-cream when I was a kid. Give it a try!


Ingredients:

125g Coffee Mate Non-Dairy Creamer powder
1 litre Fresh milk


Directions:

1. In a large bowl, stir together Coffee Mate Non-Dairy Creamer powder and fresh milk until well mixed.

2. Pour the ice cream into a 1" deep container, cover and freeze for about 4 hours or overnight.

3. The next day, remove the ice cream from the freezer and cut into 1" cubes.

4. Beat ice cream mixture with an electric mixer until smooth.

5. Add any flavouring of your preferred choice (e.g: vanilla,chocolate,durian and etc) and beat until thick and creamy.

6. Transfer back to container and freeze till well set.


Note: If you want to add durians, remove seeds from the durian and mash durian pulp with a fork till creamy before add to step 4.

Marble Cake


Ingredient

150g Butter
150g Sugar
150g Self rising flour or 150g wheat flour and 1/2 tsp baking powder (Sifted)
3 eggs
1 1/2 cocoa powder
1/2 tsp vanilla extract


Method

1. Heat oven to 180c. Grease a 20cm cake tin and line the bottom with a circle of greaseproof paper.

2. Beat the butter and sugar together for approx. 5-8 minutes until white.

3. Add the eggs one at a time, mixing well.Fold through the flour and vanilla extract until the mixture is smooth.


4. Scoop out 2 small ladles of batter into a small bowl and add cocoa powder. Mix well.

5. Pour out 1/2 of the butter batter into a prepared 20cm cake tin. Dollop randomly with cocoa batter and cover some top portion with butter batter. Use a butter knife and swirl the chocolate batter into the butter batter. Do not over swirl.

6. Bake for 45-55 mins until a skewer inserted into the centre comes out clean. Turn out onto a cooling rack and leave to cool.


Note: You can add chocolate chips to step 4 if you like.

Red bean soup





Red bean soup is great for the entire family.

For using saucepan,

Ingredients

100g Red beans
160g Rock sugar
50g Sago
Skin/peel from 1 mandarin orange (dried before hand) or 2 pieces dried tangerine peel
1400ml water

Method

1. Soak the red beans for at least 6 hours or overnight. Then rinse and drain. Soak the sago separately for less than 30 minutes. Then drain well.

2. Bring water to a boil.Add the red beans,tangerine peel or mandarin orange and boil over high heat for 15 minutes. Reduce to simmer for 1 hour till beans are softened.

3. Add rock sugar and continue to simmer over low heat for another 1/2 hour. Add sago and boil until the sago turns translucent.


For using Slow-cooker,

You can put the water, red beans and orange peel in a slow-cooker and cook it for 3 hours or overnight)



For using Microwave,


Ingredients

100g Red beans
160g Rock sugar
50g Sago
Skin/peel from 1 mandarin orange (dried before hand) or 2 pieces dried tangerine peel
700 ml Water
700ml Hot water


Preparation:

1. Soak the red beans for at least 6 hours or overnight. Then rinse and drain. Soak the sago separately for less than 30 minutes. Then drain well.

2. In a 3-litre casserole put in red beans and 700ml of water. Cook with cover at Microwave High for 20 minutes. Then let stand for 10 minutes. Slightly mash the red beans with a large spoon.

3. Add in rock sugar and 700ml of boiling water. Stir well. Cook with cover at Slow Cook High for 20 minutes. Then at Slow Cook Low for 1 hour.

4. After cooking, stir in sago. Cook with cover at Microwave High for 4-6 minutes or until the sago turns transparent. Stir at least once during cooking. Serve!


Note: you can add pandan leave if you like.

Puff Pancake


A perfect breakfast or evening tea. Sweet,delicious and yummy.


Ingredients

2 tbsps butter
3 eggs
1 tsp salt
1/2 cup milk
1/2 cup wheat flour

For topping,
icing sugar
melted butter


Directions

1. Preheat oven to 200. Put the butter in a cast iron skillet. Melt butter in oven.
2. Blend eggs,salt, milk and flour in blender or fork. Pour into pan.
3. Bake for 20 - 25 minutes until pancake puffs up and appears golden around the edges.
Remove from oven
4. Spread melted butter over the puff pancake,then sprinkle with icing sugar if you like.

Fish with lime sauce




Fish With Lime Sauce

It's fast...easy...taste...


Ingredients

* 1 red snapper fillet or white fish fillet or any fish
* 1 tablespoon light soy sauce
* 1 tablespoon cornflour
* 4-6 red chilies (press down)
* 1/2 cup lime juice
* sugar (to taste)
* sesame oil (to taste)
* 3 red onions (sliced)
* 4 scallions (cut into a thin julienne) - optional



Directions

1. For steaming,place low rack in bottom of 10 to 12 inch skillet. Pour water into bottom of pan,under rack,and bring to boil.
2. Cut fish lengthwise into 2-inch wide strips.
3. Mix fish with cornflour and soy sauce on shallow dish.
4. Place plate of fish on rack. Cover skillet. Steam 10 to 15 minutes or until fish is cooked.
5. For sauce,in a small bowl, mix lime juice and sugar together, stirly sugar till dissolved.Then add chillies and sesame oil to taste.
6. Remove from the steamer then drain water from fish.
7. Add red onions and scallions in a mix lime sauce then spoon sauce over as desired.


Note: You can add scallions over fish as desired.

Chicken with dry red pepper


Sweet, spicy and hot. This sauce is great for any meat.

Ingredients

Marinade chicken
1/2 chicken
2 tbsp thick soy sauce
1 1/2 tbsp corn flour
1 1/2 tbsp water


B
4-6 red chillies
6-8 dry red pepper
1 tsp ginger, chopped
2 tbsps Oil
Enough oil for deep frying


Seasoning
1 tbsp light soy sauce
2 tbsps thick soy sauce
2 tbsps corn oil
2 tbsps sugar
1 tbsp vinegar
1 tsps salt
2 tsps corn flour
2 tsps sesame oil


Directions

1. Remove all bones from chicken, cut into 1 inch cubes. Marinate the chicken pieces with 1 tbsp thick soy sauce,1 1/2 tbsp corn flour and 1 1/2 tbsp water. Let it marinate for 20 minutes or overnight.
2. Wipe clean, remove seeds of dry red pepper, cut into 1 inch long pieces.
3. Mix seasonings in a small bowl and set aside.
4. Heat enough oil and fry chicken until golden brown. Remove chicken and drain off oil from frying pan.
5. Heat 2 tbsps oil to fry red chilles until it turns black.Add ginger,dry red pepper and chicken, stir quickly, next add the seasoning mix, stir until thickened and heated thoroughly; turn off the fire.

Note:
If you dislike red chillies, just remove red chillies.
If you want more spicy, add more red chillies.

Chicken and potato in oyster sauce


Its just simple to cook but delicious. The kids love this dish.

Ingredients
1/2 Boneless Chicken thighs cut into bite-size pieces
2 Medium potatoes, peeled and cut into cubes
1 tbsp chopped garlic
3 tbsps oyster sauce
1/2 cup water
1 tbsp thick soy sauce
1/2 tbsp light soy sauce
1 tbsp sugar
1 tbsp Oil
Enough Oil for deep frying


Directions

1. Heat enough oil in a large deep frying pan and deep fry the potatoes until golden brown. Remove the potatoes from the oil using a slotted spoon. Drain them on paper towel or plate.
2. Heat oil and fry the garlic until golden.
3. Add chicken,fry for about 5 minutes.
4. Then add oyster sauce and water.Stir,cover and let cook for about 5 minutes.
5. Add in thick soy sauce, light soy sauce and sugar.Stir,cover and let cook for another 5 minutes.
6. Add the potatoes. Add more water if needed.Simmer with lower heat until chicken is fully cooked.
7. Remove lid, cook over medium heat until the sauce is thick, stirring constantly.
8. Serve with warm rice.

Lamb Shoulder Steak


Very simple recipe but so delicious.My family love it. If you like lamb then you will love it.

Ingredients
* 6 boneless lamb shoulder
* 3 tablespoons dark soy sauce
* 3-4 tablespoons oyster sauce
* Oil


Directions

1. Trim off the meat of fat or leave it on.
2. Add dark soy sauce and oyster sauce,mix throughly
and marinate for 1 hour or overnight in the refrigerate.
3. Heat the oil in a large saucepan.
4. Add the lamb to pan and brown the lamb on all sides,
adding a little more oyster sauce,if necessary.
5. Turn heat down to slow and fry till dark brown on all
sides.
6. Serve with warm rice.

Note: You can cut the meat into small pieces if you like. Also great for grill and BBQ.
