French Beans With Dried Prawns





Ingredient

1/2kg french beans
4 tbsps garlic - sliced
1 tbsp ginger - sliced
2 tbsps dried prawns


Seasoning

2 tbsps sugar
2 tbsps vinegar
1 tbsp light soy sauce
1 tbsp thick soy sauce
3 tbsps water
1/2 tsp salt


Method

1. Soak dried prawns until soft and drain. Set aside.
2. Cut beans into short pieces, wash and blanch in hot oil for 1 minute. Remove and set aside.
3. Heat 2 tbsps oil and stir fry dried prawns,garlic,ginger and beans. Add in seasoning and stir briefly. Serve!

Durian Sponge Pudding Cake







Yummy...very delicious...


Ingredient

For sponge cake (1 cake can make 2 )

A
5 Egg yolks
20g Sugar

B
5 Egg whites

C
130g sugar

D
120g Cake flour

E
80g Melted butter


Method

1. Beat (A) till light and fluffy. Set aside.
2. Beat (B) till soft peaks are formed. Add (C) and beat till stiff.
3. Mix the egg white mixture with (A) till well blended.
4. Fold in (D) and mix evenly.
5. Stir in (E) slowly and mix well. Pour batter into a 8" round mould.
6. Bake at 180 c for 30 minutes. Remove the cake immediately when it is baked.

Tips:
- the sponge cake should be baked on the lower rack of the oven.




For durian cream cake,

Ingredients

230g durian puree
30g sugar (optional)
2 1/2 tbsps Gelatine powder
90ml boiling hot water
400g Whipping cream
Any fruits you like


Method

1. Cut the sponge cake into 2 horizontal layers.

2. Beat whipping cream and sugar till soft peaks form. Set aside.

3. Cook durian puree and sugar till it boils.

4. Gelatine dissolve in boiling hot water. Pour into durian mixture and mix till evenly blended.

5. Let it cool over ice water till it is at room temperature. Remove from ice water. Immediately add whipping cream, mix till well blended.

6. Place the 1st layer of sponge cake on the bottom of the ring. Pour 1/2 of the whipping cream over it.

7. Place the 2nd layer of sponge cake on the other bottom of the ring. Pour 1/2 of the remaining whipping cream over it.

8. Refrigerate till firm.

Tips:
- the durian gelatine mixture shouldn't be too cool.
- if you don't like durians, you can replace durians with strawberry,mango or other fruits.



For pudding





Ingredient

2/3 pudding powder durian flavour
1000ml water


Method

1. Boil 1000ml of water.
2. Turn off the flame. Pour in pudding powder. Stir for 5 minutes.
3. Add fruit sugar and mix well.
4. Remove the heat and let it cool to room temperature. (don't wait till its harden! := )
5. Remove the cake from the refrigerate.
6. Pour 1/2 of the pudding over it. Repeat 6 for 2nd layer cake.
7. Let it set before chilling in the refrigerator for few hours or overnight.
8. Remove the cake from ring and decorate it as you desire.

Durian Cream Cake




Do you love durians? I and my kids made this cake for Father's day. This is so easy and delicious.


Ingredients

For sponge cake,

3 eggs
1 tsp salt
3/4 cup sugar
1 cup cake flour
1 tsp baking powder
50g butter melted

Method

1. Grease a deep 8" round cake tin and line the bottom with baking paper.

2. Beat eggs and salt. Add sugar and beat until thick.

3. Sift together flour and baking powder. Add to egg mixture. Fold in butter.

4. Pour the mixture into the cake tin and bake for 25-30 minutes at 190 c or until a skewer inserted in the centre comes out clean.

5. Remove from the oven then wait for about 5 minutes before turning it out onto a cooling racks.Carefully peel off the base paper.



For Durian Cream Cake

Ingredients

230g durian puree
30g sugar (optional)
2 1/2 tbsps Gelatine powder
90ml boiling hot water
400g Whipping cream
Any fruits you like


Method

1. Cut the sponge cake into 2 horizontal layers.

2. Beat whipping cream and sugar till soft peaks form. Set aside.

3. Cook durian puree and sugar till it boils.

4. Gelatine dissolve in boiling hot water. Pour into durian mixture and mix till evenly blended.

5. Let it cool over ice water till it is at room temperature. Remove from ice water. Immediately add whipping cream, mix till well blended.

6. Cut any fruits into thin slices about 2mm thick and attach them to the side of an 8" round ring mould.

7. Place the 1st layer of sponge cake on the bottom of the ring. Pour 1/2 of the whipping cream over it.

8. Top with the 2nd layer of sponge cake and pour the remaining 1/2 of the whipping cream over it and smooth over.

9. Refrigerate till firm or overnight.

10. Remove cake from ring and decorate it as you desire.

Vanilla Cupcake


This is very simple and easy to make.

Ingredients

10 medium cupcake papers
185g Self-raising flour
1/2 tsp baking soda
150g Butter
150g Sugar
3 Eggs
1 tsp Vanilla essence
100ml Whipping cream
1 tbsp icing sugar


Method

1. Preheat oven to 180c. Arrange 10 medium cupcake papers on a baking sheet and set aside.

2. In a large bowl, sift together the flour and baking soda,set aside.

3. Beat butter and sugar untill creamy.

4. Add eggs one at a time and beat well,then add vanilla essence and mix well.

5. Then add the flour and baking soda and mix well.

6. Spoon batter into cupcake papers about 1/2 or 3/4 full.

7. Bake for 20 - 25 minutes or until toothpick inserted in center comes out clean.

8. Remove the cupcakes from the oven and let cool completely before frosting.

9. In a medium bowl, beat whipping cream and icing sugar till stiff.

10. Place whipping cream into a piping bag with a star tip. Pipe whipped cream around top of cupcake. Serve!

Eggplant in oyster sauce with dried prawns




It's perfect for lunch or dinner.


Ingredients

3 large eggplants - cut into thick strips
5 red onions - chopped
3 cloves garlic - chopped
1 tsp salt
cold water
3-4 tbsps oyster sauce
1/4 cup water
1 tsp corn flour & 1 tbsp water - mixed
Oil for frying



For topping

2-3 tbsps dried prawns - soaked and drain well
3 red chillies
1 tsp sugar
1/4 tsp salt



Method

1. Place eggplant in a large bowl, sprinkle with salt and cover with cold water. Let soak 15 minutes.Drain well.

2. Heat 1 tbsp oil in a small saucepan and fry the dried prawns until lightly browned and crispy and drain oil. Put it in a blender,add red chillies,sugar and 1/4 salt and blend until fine.Keep aside.

3. Heat oil in a wok and fry eggplant until lightly browned on each side.Remove,drain and arrange on a plate and keep aside.

4. Heat oil and saute the red onions and garlic until aromatic and golden brown. Add oyster sauce, stirring and cook until mixed well. Spoon 1/2 of sauce mixture in a small bowl and set aside. Add 1/4 cup water to remaining sauce in wok,stir-fry.Add the cornflour mixture and cook until sauce thickens.

5. Pour the sauce over the eggplant then sprinkle with 1/2 of sauce mix and dried prawns. Dish up and serve!


Note:

Several ways to cook eggplants

* Preheat the oven to 245 degrees C. Cut the eggplants into small pieces. Place on a baking sheet and bake until tender for about 25 minutes. Remove from the oven and let cool. Then follow step 2, 4 - 5.

* Arrange eggplant on a plate. Steam over high heat for about 5 minutes. Drain away excess liquid. Then follow step 2, 4 - 5.

Sweet and sour fish with pineapple




This is a sweet and delicious. My family love it. Even the kids love this dish.


Ingredients

1/2 of pineapple - cut into small pieces
2 pieces tomatoes - cut into small pieces
Oil for deep frying
2 tbsp Oil for frying


Marinade

1 fish fillet
2 tbsps wheat flour
2 tbsps corn flour
1 egg
2 tbsps thick soy sauce
1/4 tsp salt
1 tsp sugar
1 tbsp vinegar
1/4 tsp black pepper



Sauce

1 cup chicken stock
1/2 cup pineapple juice
1/4 cup vinegar orlemon juice
1/4 cup sugar
1/4 cup tomato sauce / ketchup
1 tbsp corn flour
1 tbsp thick soy sauce
1/4 tsp salt



Method

1. Wash the fish well and remove the bones from the fish.

2. Combine wheat flour,corn flour and salt in a small bowl. Make a well in the center, add the egg and mix using a spoon. Add soy sauce and beat until the batter is smooth. Add sugar,black pepper and vinegar. Marinade the fish in the batter for 2 hours.

3. In a small bowl, mix all sauce ingredients and keep aside.

4. Heat oil in a wok and deep fry the marinated fish until golden brown and cooked. Drain on kitchen paper or plate.Keep aside.

5. Heat 2 tbsps oil in a wok or saucepan.Add the tomatoes and cook until tender. Add pineapple and sauce mix and bring to a boil, stirring constantly,simmer until thicken.

6. Pour the sauce over the fish. Serve with white rice.


Note:

If you want spicy, add red chillies.
You can add red pepper,yellow pepper,green pepper or onions if you like.

Homemade Tau Fu Fah (Soy Bean)



It's sweet and soft.

To make soya bean milk

125g whole soya beans
1 litre water
sugar to taste


1 tbsp corn flour

1/4 cup water

1 tsp Guo Suan



Method


To make soy bean milk

1. Soak soy beans in clean water overnight. Drain water.

2. Add half of the beans and half of the water in a blender until smooth. Pour the mixture in a large bowl and keep aside.

3. Repeat step 2 with the remaining beans and water.

4. Pour the mixture and strain through a muslin cloth as much liquid as possible.

5. Sieve the soy milk through the muslin to remove any remaining grit.

6. Pour soy milk into a big pot. Bring to the boil. Remove any foam. Add sugar to taste. Ready!


To make homemade Tau Fu Fah

1. Mix the corn flour,water and guo suan in a small bowl and keep aside.

2. In a pot, bring soy bean milk to boil. When the soy bean milk is boiled up,remove from heat.


3. Pour the gua suam mix and soy bean milk into a clean pot. Cover lid and let it stand for 30 minutes. Don't shake or move it!

4. Serve with some syrup.


Sugar syrup : Bring 3 tbsps sugar or 1 piece rock sugar and 1/4 water to a boil,stirring until sugar is dissolved. Adjust to taste.

Ginger Syrup : Bring 1 cup sugar,1/2 cup water and some ginger slices untill dissolved.
Adjust to taste.


Note:

If you don't have the time or lazy to make soy bean milk then buy soy bean milk at the shop.

Red cooked chicken (Ayam masak merah)



Sweet,hot and spicy.

Ingredients

1 piece boneless chicken thigh - cut into bite size pieces
1 tsp salt
1/4 tsp turmeric powder
oil for deep frying

Blend ingredients A

3 cloves garlic - minced
1 large onion - minced
1 tbsp ginger - minced

Blend ingredients B

3 fresh red chillies or 10 dried chillies - soaked in hot water for at least 20 minutes and drain water.
5-6 red chillies


Seasoning C

1/2 cup tomato sauce
1/4 cup water
2 tbsps sugar
1 - 2 tsps salt


Method

1. Marinate chicken pieces with salt and turmeric powder. Set aside.

2. Place A ingredients in a blender and blend until smooth and keep aside.

3. Place B ingredients in a blender and blend until smooth and keep aside.

4. Heat oil in a wok on medium high heat. Add chicken pieces and deep-fry until golden brown. Remove chicken and drain off oil from frying pan.

5. Heat oil and saute blend ingredients (A) until aroma. Add blend ingredients (B) and fry until the oil is separated.

6. Add seasoning C , mix well and bring to a boil, stirring constantly. Add chicken pieces and cook covered until chicken is cooked. Uncover and cook over medium heat until sauce thickens.

7. Adjust seasonings and serve with warm white rice


Note:
If you want more spicy, add more red chilles.

Chinese BBQ Pork (Char siu)




Chinese BBQ Pork (Char siu)


Its sweet,delicious and tender. My family love it.

Ingredients

1lb Pork belly (cut into 4 pieces)
2 tbsps Oil for frying
A little water


To make marinate

1 tbsp Oil
1 tbsp Salt
1 tbsp Water
1 tsp Sesame oil
1/4 tsp White pepper
2 tbsps Sugar
2 tbsps Corn flour
2 tbsps Thick soy sauce
2 tbsps Light soy sauce
2 tbsps Oyster sauce
2 tbsps Char siu sauce


Method

1. Combine all marinate ingredients in a small bowl and mix well.

2. Pour over the pork pieces and mix. Cover and marinate in the refrigerator overnight.
3. The next day, remove the pork from the refrigerator and let stand at room temperature for a few minutes.

4. In a large skillet, heat 2 tbsps oil over low heat. Add pork and marinate.

5. Coat the pork with the marinate,cover and cook for a few minutes.

6. Uncover and cook, turning pork from time to time. Continue cooking untill pork is brown on all sides.

7. If it is dry, add a little water.

8. When the pork is cooked then remove from the skillet.

9. Cut the pork into thin strips and serve with warm rice.



Note:

Choice of meat

If you love tender, juicy, moist, and a little fatty, use pork belly.
If you don't like fatty,use pork loin.
If you don't like to frying, you may use oven instead of frying.

Sweet Corn and Egg Soup


It's quick, easy and delicious.


1 can Sweet Corn Cream Style (I usually buy "Del Monte Sweet Corn Cream Style" )
3 cups of water
3 Eggs (beaten)
Salt to taste
1/2 tsp sugar
1/2 tsp Ajinomoto
White pepper
3 tbsps Corn flour
1/2 cup water


Method

1. Mix the corn flour in 1/2 cup water and keep aside.
2. In a deep saucepan, add 3 cups water and corn, stirring and cover. Bring to boil.Simmer for 15 minutes or until the corn is cooked.
3. Add eggs,stir slowly then add sugar,ajinomoto,pepper and salt to taste.
4. Add the cornstarch mixture to thicken the soup and cover.
5. Let simmer for 10 minutes before serving.

Homemade Ice-cream


Do you like ice-cream?Would you want to make your own homemade ice cream, here's a recipe.
My mother taught me how to make ice-cream when I was a kid. Give it a try!


Ingredients:

125g Coffee Mate Non-Dairy Creamer powder
1 litre Fresh milk


Directions:

1. In a large bowl, stir together Coffee Mate Non-Dairy Creamer powder and fresh milk until well mixed.

2. Pour the ice cream into a 1" deep container, cover and freeze for about 4 hours or overnight.

3. The next day, remove the ice cream from the freezer and cut into 1" cubes.

4. Beat ice cream mixture with an electric mixer until smooth.

5. Add any flavouring of your preferred choice (e.g: vanilla,chocolate,durian and etc) and beat until thick and creamy.

6. Transfer back to container and freeze till well set.


Note: If you want to add durians, remove seeds from the durian and mash durian pulp with a fork till creamy before add to step 4.

Marble Cake


Ingredient

150g Butter
150g Sugar
150g Self rising flour or 150g wheat flour and 1/2 tsp baking powder (Sifted)
3 eggs
1 1/2 cocoa powder
1/2 tsp vanilla extract


Method

1. Heat oven to 180c. Grease a 20cm cake tin and line the bottom with a circle of greaseproof paper.

2. Beat the butter and sugar together for approx. 5-8 minutes until white.

3. Add the eggs one at a time, mixing well.Fold through the flour and vanilla extract until the mixture is smooth.


4. Scoop out 2 small ladles of batter into a small bowl and add cocoa powder. Mix well.

5. Pour out 1/2 of the butter batter into a prepared 20cm cake tin. Dollop randomly with cocoa batter and cover some top portion with butter batter. Use a butter knife and swirl the chocolate batter into the butter batter. Do not over swirl.

6. Bake for 45-55 mins until a skewer inserted into the centre comes out clean. Turn out onto a cooling rack and leave to cool.


Note: You can add chocolate chips to step 4 if you like.

Red bean soup





Red bean soup is great for the entire family.

For using saucepan,

Ingredients

100g Red beans
160g Rock sugar
50g Sago
Skin/peel from 1 mandarin orange (dried before hand) or 2 pieces dried tangerine peel
1400ml water

Method

1. Soak the red beans for at least 6 hours or overnight. Then rinse and drain. Soak the sago separately for less than 30 minutes. Then drain well.

2. Bring water to a boil.Add the red beans,tangerine peel or mandarin orange and boil over high heat for 15 minutes. Reduce to simmer for 1 hour till beans are softened.

3. Add rock sugar and continue to simmer over low heat for another 1/2 hour. Add sago and boil until the sago turns translucent.


For using Slow-cooker,

You can put the water, red beans and orange peel in a slow-cooker and cook it for 3 hours or overnight)



For using Microwave,


Ingredients

100g Red beans
160g Rock sugar
50g Sago
Skin/peel from 1 mandarin orange (dried before hand) or 2 pieces dried tangerine peel
700 ml Water
700ml Hot water


Preparation:

1. Soak the red beans for at least 6 hours or overnight. Then rinse and drain. Soak the sago separately for less than 30 minutes. Then drain well.

2. In a 3-litre casserole put in red beans and 700ml of water. Cook with cover at Microwave High for 20 minutes. Then let stand for 10 minutes. Slightly mash the red beans with a large spoon.

3. Add in rock sugar and 700ml of boiling water. Stir well. Cook with cover at Slow Cook High for 20 minutes. Then at Slow Cook Low for 1 hour.

4. After cooking, stir in sago. Cook with cover at Microwave High for 4-6 minutes or until the sago turns transparent. Stir at least once during cooking. Serve!


Note: you can add pandan leave if you like.

Puff Pancake


A perfect breakfast or evening tea. Sweet,delicious and yummy.


Ingredients

2 tbsps butter
3 eggs
1 tsp salt
1/2 cup milk
1/2 cup wheat flour

For topping,
icing sugar
melted butter


Directions

1. Preheat oven to 200. Put the butter in a cast iron skillet. Melt butter in oven.
2. Blend eggs,salt, milk and flour in blender or fork. Pour into pan.
3. Bake for 20 - 25 minutes until pancake puffs up and appears golden around the edges.
Remove from oven
4. Spread melted butter over the puff pancake,then sprinkle with icing sugar if you like.

Fish with lime sauce




Fish With Lime Sauce

It's fast...easy...taste...


Ingredients

* 1 red snapper fillet or white fish fillet or any fish
* 1 tablespoon light soy sauce
* 1 tablespoon cornflour
* 4-6 red chilies (press down)
* 1/2 cup lime juice
* sugar (to taste)
* sesame oil (to taste)
* 3 red onions (sliced)
* 4 scallions (cut into a thin julienne) - optional



Directions

1. For steaming,place low rack in bottom of 10 to 12 inch skillet. Pour water into bottom of pan,under rack,and bring to boil.
2. Cut fish lengthwise into 2-inch wide strips.
3. Mix fish with cornflour and soy sauce on shallow dish.
4. Place plate of fish on rack. Cover skillet. Steam 10 to 15 minutes or until fish is cooked.
5. For sauce,in a small bowl, mix lime juice and sugar together, stirly sugar till dissolved.Then add chillies and sesame oil to taste.
6. Remove from the steamer then drain water from fish.
7. Add red onions and scallions in a mix lime sauce then spoon sauce over as desired.


Note: You can add scallions over fish as desired.

Chicken with dry red pepper


Sweet, spicy and hot. This sauce is great for any meat.

Ingredients

Marinade chicken
1/2 chicken
2 tbsp thick soy sauce
1 1/2 tbsp corn flour
1 1/2 tbsp water


B
4-6 red chillies
6-8 dry red pepper
1 tsp ginger, chopped
2 tbsps Oil
Enough oil for deep frying


Seasoning
1 tbsp light soy sauce
2 tbsps thick soy sauce
2 tbsps corn oil
2 tbsps sugar
1 tbsp vinegar
1 tsps salt
2 tsps corn flour
2 tsps sesame oil


Directions

1. Remove all bones from chicken, cut into 1 inch cubes. Marinate the chicken pieces with 1 tbsp thick soy sauce,1 1/2 tbsp corn flour and 1 1/2 tbsp water. Let it marinate for 20 minutes or overnight.
2. Wipe clean, remove seeds of dry red pepper, cut into 1 inch long pieces.
3. Mix seasonings in a small bowl and set aside.
4. Heat enough oil and fry chicken until golden brown. Remove chicken and drain off oil from frying pan.
5. Heat 2 tbsps oil to fry red chilles until it turns black.Add ginger,dry red pepper and chicken, stir quickly, next add the seasoning mix, stir until thickened and heated thoroughly; turn off the fire.

Note:
If you dislike red chillies, just remove red chillies.
If you want more spicy, add more red chillies.

Chicken and potato in oyster sauce


Its just simple to cook but delicious. The kids love this dish.

Ingredients
1/2 Boneless Chicken thighs cut into bite-size pieces
2 Medium potatoes, peeled and cut into cubes
1 tbsp chopped garlic
3 tbsps oyster sauce
1/2 cup water
1 tbsp thick soy sauce
1/2 tbsp light soy sauce
1 tbsp sugar
1 tbsp Oil
Enough Oil for deep frying


Directions

1. Heat enough oil in a large deep frying pan and deep fry the potatoes until golden brown. Remove the potatoes from the oil using a slotted spoon. Drain them on paper towel or plate.
2. Heat oil and fry the garlic until golden.
3. Add chicken,fry for about 5 minutes.
4. Then add oyster sauce and water.Stir,cover and let cook for about 5 minutes.
5. Add in thick soy sauce, light soy sauce and sugar.Stir,cover and let cook for another 5 minutes.
6. Add the potatoes. Add more water if needed.Simmer with lower heat until chicken is fully cooked.
7. Remove lid, cook over medium heat until the sauce is thick, stirring constantly.
8. Serve with warm rice.

Lamb Shoulder Steak


Very simple recipe but so delicious.My family love it. If you like lamb then you will love it.

Ingredients
* 6 boneless lamb shoulder
* 3 tablespoons dark soy sauce
* 3-4 tablespoons oyster sauce
* Oil


Directions

1. Trim off the meat of fat or leave it on.
2. Add dark soy sauce and oyster sauce,mix throughly
and marinate for 1 hour or overnight in the refrigerate.
3. Heat the oil in a large saucepan.
4. Add the lamb to pan and brown the lamb on all sides,
adding a little more oyster sauce,if necessary.
5. Turn heat down to slow and fry till dark brown on all
sides.
6. Serve with warm rice.

Note: You can cut the meat into small pieces if you like. Also great for grill and BBQ.
