Red bean soup





Red bean soup is great for the entire family.

For using saucepan,

Ingredients

100g Red beans
160g Rock sugar
50g Sago
Skin/peel from 1 mandarin orange (dried before hand) or 2 pieces dried tangerine peel
1400ml water

Method

1. Soak the red beans for at least 6 hours or overnight. Then rinse and drain. Soak the sago separately for less than 30 minutes. Then drain well.

2. Bring water to a boil.Add the red beans,tangerine peel or mandarin orange and boil over high heat for 15 minutes. Reduce to simmer for 1 hour till beans are softened.

3. Add rock sugar and continue to simmer over low heat for another 1/2 hour. Add sago and boil until the sago turns translucent.


For using Slow-cooker,

You can put the water, red beans and orange peel in a slow-cooker and cook it for 3 hours or overnight)



For using Microwave,


Ingredients

100g Red beans
160g Rock sugar
50g Sago
Skin/peel from 1 mandarin orange (dried before hand) or 2 pieces dried tangerine peel
700 ml Water
700ml Hot water


Preparation:

1. Soak the red beans for at least 6 hours or overnight. Then rinse and drain. Soak the sago separately for less than 30 minutes. Then drain well.

2. In a 3-litre casserole put in red beans and 700ml of water. Cook with cover at Microwave High for 20 minutes. Then let stand for 10 minutes. Slightly mash the red beans with a large spoon.

3. Add in rock sugar and 700ml of boiling water. Stir well. Cook with cover at Slow Cook High for 20 minutes. Then at Slow Cook Low for 1 hour.

4. After cooking, stir in sago. Cook with cover at Microwave High for 4-6 minutes or until the sago turns transparent. Stir at least once during cooking. Serve!


Note: you can add pandan leave if you like.
